Receiving a celiac disease diagnosis can be challenging and often marks the beginning of a bumpy journey. During this session, I will take you on a journey that aims to make everyday life with celiac disease easier. I’ll share basic tips and advice on how to succeed with gluten-free baking - both for everyday meals and special occasions. This session will place a strong focus on children with celiac disease. My goal is to provide you, as parents, with the tools to prepare food that keeps your children healthy while also bringing them joy and a sense of normalcy. There will be gluten-free samples to taste.

About the instructor: Øyvind Engen has run Cøliakikokken (“The Celiac Chef”) since 2015. He previously held a talk at the food festival in 2017 and taught a pizza-making course in 2018. Since then, he has published two gluten-free baking books - the first of which has sold over 5,000 copies. He has also taught baking courses to more than 1,500 people across Norway, making him one of the most experienced gluten-free baking instructors in the country.

Norwegian apple cider has seen tremendous development and growth over many years, and now production is also gaining momentum in Trøndelag. Yngve from Inderøy Mosteri will share insights on what it’s like to grow apples in Trøndelag, what it takes to produce apples of top quality for cider making, and present some of his own flavors. Ulrik from ØX will talk about the cider production process - from apple juice to finished product - what makes Norwegian and Trøndersk cider unique, and present different cider styles.
